Beef and Broccoli

Ingredients
- 1 lb flank steak, thinly sliced against the grain
- 1/4 cup soy sauce
- 2 tbsp brown sugar
- 1 tbsp cornstarch, plus 1 tsp for the beef
- 2 tbsp vegetable oil
- 3 cups broccoli florets
- 3 cloves garlic, minced
- 1 tsp fresh ginger, minced
- 1/2 cup beef broth
- 1 tbsp sesame oil
- Cooked rice for serving
Instructions
- 1Toss the sliced steak with 1 teaspoon cornstarch and let sit for 10 minutes.
- 2Whisk together the soy sauce, brown sugar, remaining cornstarch, and beef broth in a small bowl and set aside.
- 3Heat 1 tablespoon of oil in a large skillet or wok over high heat and sear the beef for 1-2 minutes per side until browned; remove and set aside.
- 4Add the remaining oil and stir-fry the broccoli for 3-4 minutes until crisp-tender and bright green, adding a splash of water and covering briefly to steam if needed.
- 5Add the garlic and ginger and cook for 30 seconds, then return the beef to the pan.
- 6Pour in the sauce mixture and toss for 1-2 minutes until it thickens and coats everything.
- 7Drizzle with sesame oil and serve over rice.
