Beef and Egg Noodles

Ingredients

  • 1.5 lbs ground beef (85/15)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp tomato paste
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp paprika
  • 12 oz egg noodles
  • 1/2 cup sour cream
  • Salt and pepper to taste
  • Chopped chives for garnish

Instructions

  1. 1Brown the ground beef with the onion in a large skillet over medium-high heat for 6-7 minutes, breaking the meat into small pieces.
  2. 2Add the garlic and tomato paste and cook for 1-2 minutes.
  3. 3Pour in the beef broth and Worcestershire sauce and stir in the paprika, then add the uncooked egg noodles directly to the skillet.
  4. 4Bring to a simmer, cover, and cook for 10-12 minutes, stirring occasionally, until the noodles are tender and most of the liquid is absorbed.
  5. 5Remove from heat and stir in the sour cream, then season with salt and pepper.
  6. 6Garnish with chopped chives before serving.
