Beef Enchiladas

Ingredients

  • 1.5 lbs ground beef (85/15)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • Salt and pepper to taste
  • 20 oz red enchilada sauce
  • 10 flour tortillas
  • 2.5 cups shredded cheddar or Mexican blend cheese
  • Chopped cilantro and sour cream for serving

Instructions

  1. 1Preheat the oven to 375°F.
  2. 2Brown the ground beef with the onion in a large skillet over medium-high heat for 6-7 minutes.
  3. 3Add the garlic, chili powder, and cumin, and cook for 1 minute, then season with salt and pepper.
  4. 4Spread a thin layer of enchilada sauce in the bottom of a 9x13-inch baking dish.
  5. 5Fill each tortilla with a spoonful of the beef mixture and a sprinkle of cheese, roll up tightly, and arrange seam-side down in the dish.
  6. 6Pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese.
  7. 7Bake for 20-25 minutes until the cheese is melted and bubbling.
  8. 8Garnish with cilantro and serve with sour cream.
