French Dip Sandwiches

Ingredients

  • 3 lb beef chuck roast
  • Salt and pepper to taste
  • 2 tbsp vegetable oil
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup water
  • 2 tbsp soy sauce
  • 1 tsp dried thyme
  • 2 bay leaves
  • 6 hoagie rolls
  • 6 slices provolone cheese

Instructions

  1. 1Season the roast generously with salt and pepper.
  2. 2Heat the oil in a large Dutch oven over medium-high heat and sear the roast on all sides, about 3-4 minutes per side, then remove and set aside.
  3. 3Add the onion to the pot and cook for 4-5 minutes until softened, then add the garlic and cook 30 seconds more.
  4. 4Pour in the beef broth, water, and soy sauce, scraping up any browned bits, and add the thyme and bay leaves.
  5. 5Return the roast to the pot, cover, reduce heat to low, and simmer for 2.5 hours, or until the meat shreds easily with a fork.
  6. 6Remove the roast and shred it with two forks, then strain the cooking liquid to use as the dipping jus, discarding the solids.
  7. 7Toast the hoagie rolls, pile them high with shredded beef, top with provolone, and briefly broil until the cheese melts.
  8. 8Serve each sandwich with a small cup of warm jus for dipping.
