French Dip Sandwiches

Ingredients
- 3 lb beef chuck roast
- Salt and pepper to taste
- 2 tbsp vegetable oil
- 1 onion, sliced
- 4 cloves garlic, minced
- 4 cups beef broth
- 1 cup water
- 2 tbsp soy sauce
- 1 tsp dried thyme
- 2 bay leaves
- 6 hoagie rolls
- 6 slices provolone cheese
Instructions
- 1Season the roast generously with salt and pepper.
- 2Heat the oil in a large Dutch oven over medium-high heat and sear the roast on all sides, about 3-4 minutes per side, then remove and set aside.
- 3Add the onion to the pot and cook for 4-5 minutes until softened, then add the garlic and cook 30 seconds more.
- 4Pour in the beef broth, water, and soy sauce, scraping up any browned bits, and add the thyme and bay leaves.
- 5Return the roast to the pot, cover, reduce heat to low, and simmer for 2.5 hours, or until the meat shreds easily with a fork.
- 6Remove the roast and shred it with two forks, then strain the cooking liquid to use as the dipping jus, discarding the solids.
- 7Toast the hoagie rolls, pile them high with shredded beef, top with provolone, and briefly broil until the cheese melts.
- 8Serve each sandwich with a small cup of warm jus for dipping.
