Beef Goulash

Ingredients
- 2.5 lbs beef chuck, cut into 1-inch cubes
- 2 tbsp vegetable oil
- 2 onions, diced
- 3 cloves garlic, minced
- 3 tbsp sweet Hungarian paprika
- 1 tbsp tomato paste
- 2 cups beef broth
- 14.5 oz canned diced tomatoes
- 1 red bell pepper, diced
- 1 tsp caraway seeds
- Salt and pepper to taste
- Sour cream for serving
Instructions
- 1Pat the beef dry and season with salt and pepper.
- 2Heat the oil in a large Dutch oven over medium-high heat and brown the beef in batches, about 5-6 minutes, then set aside.
- 3Add the onions to the pot and cook for 7-8 minutes until deeply softened, then add the garlic and cook 30 seconds more.
- 4Remove the pot from the heat briefly and stir in the paprika and tomato paste, coating the onions well before returning to the heat to avoid scorching the paprika.
- 5Add the beef broth, diced tomatoes, bell pepper, and caraway seeds, then return the beef to the pot.
- 6Bring to a simmer, cover, reduce heat to low, and cook for 1.5 to 2 hours, stirring occasionally, until the beef is very tender.
- 7Season with salt and pepper to taste and serve with a dollop of sour cream.
