Beef Quesadillas

Ingredients
- 1 lb ground beef (80/20)
- 1 tbsp taco seasoning
- 1/3 cup water
- 8 flour tortillas
- 2.5 cups shredded Mexican cheese blend
- 2 tbsp butter, softened
- Salsa and sour cream for serving
Instructions
- 1Brown the ground beef in a skillet over medium-high heat for 6-7 minutes, breaking it into crumbles.
- 2Drain excess fat, stir in the taco seasoning and water, and simmer for 3-4 minutes until thickened.
- 3Lay 4 tortillas flat and sprinkle with cheese, then top with the seasoned beef and more cheese, and finish with the remaining tortillas.
- 4Butter the outside of each quesadilla lightly.
- 5Heat a large skillet or griddle over medium heat and cook each quesadilla for 2-3 minutes per side until golden and the cheese has melted.
- 6Cut into wedges and serve with salsa and sour cream.
