Slow-Cooker Beef and Vegetables

Ingredients
- 2.5 lbs beef chuck roast, cut into large chunks
- Salt and pepper to taste
- 2 tbsp vegetable oil
- 4 carrots, cut into chunks
- 4 potatoes, cut into chunks
- 1 onion, sliced
- 3 cloves garlic, minced
- 2.5 cups beef broth
- 2 tbsp tomato paste
- 1 tbsp Worcestershire sauce
- 1 tsp dried thyme
- 2 tbsp cornstarch mixed with 2 tbsp water
Instructions
- 1Season the beef chunks with salt and pepper.
- 2Heat the oil in a skillet over medium-high heat and sear the beef in batches for 2-3 minutes per side, then transfer to the slow cooker.
- 3Add the carrots, potatoes, onion, and garlic to the slow cooker.
- 4Whisk together the beef broth, tomato paste, Worcestershire sauce, and thyme, then pour over the beef and vegetables.
- 5Cover and cook on low for 7-8 hours or on high for 5-6 hours, until the beef is very tender.
- 6Stir the cornstarch slurry into the slow cooker and let cook uncovered on high for 10-15 minutes until the sauce thickens.
- 7Season with additional salt and pepper to taste before serving.
