Slow-Cooker Beef and Vegetables

Ingredients

  • 2.5 lbs beef chuck roast, cut into large chunks
  • Salt and pepper to taste
  • 2 tbsp vegetable oil
  • 4 carrots, cut into chunks
  • 4 potatoes, cut into chunks
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 2.5 cups beef broth
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 2 tbsp cornstarch mixed with 2 tbsp water

Instructions

  1. 1Season the beef chunks with salt and pepper.
  2. 2Heat the oil in a skillet over medium-high heat and sear the beef in batches for 2-3 minutes per side, then transfer to the slow cooker.
  3. 3Add the carrots, potatoes, onion, and garlic to the slow cooker.
  4. 4Whisk together the beef broth, tomato paste, Worcestershire sauce, and thyme, then pour over the beef and vegetables.
  5. 5Cover and cook on low for 7-8 hours or on high for 5-6 hours, until the beef is very tender.
  6. 6Stir the cornstarch slurry into the slow cooker and let cook uncovered on high for 10-15 minutes until the sauce thickens.
  7. 7Season with additional salt and pepper to taste before serving.
