Beef Stroganoff

Ingredients
- 1.5 lbs sirloin steak, thinly sliced
- Salt and pepper to taste
- 3 tbsp butter
- 8 oz mushrooms, sliced
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tbsp all-purpose flour
- 2 cups beef broth
- 1 tbsp Dijon mustard
- 1/2 cup sour cream
- 12 oz egg noodles
- Chopped parsley for garnish
Instructions
- 1Season the sliced steak with salt and pepper.
- 2Melt 1 tablespoon butter in a large skillet over high heat and sear the beef in batches for 1-2 minutes per side until browned; remove and set aside.
- 3Add the remaining butter to the pan and cook the mushrooms and onion over medium heat for 6-7 minutes until softened and golden.
- 4Add the garlic and flour, stirring to coat, and cook for 1 minute.
- 5Slowly whisk in the beef broth and Dijon mustard, bringing to a simmer until the sauce thickens, about 4-5 minutes.
- 6Meanwhile, cook the egg noodles in salted boiling water according to package directions, then drain.
- 7Reduce the heat to low, stir the sour cream into the sauce, then return the beef to the pan and warm through without boiling.
- 8Serve the stroganoff over the egg noodles, garnished with chopped parsley.
