Chocolate Chip Pancakes

Ingredients

  • 1 3/4 cups all-purpose flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 1/2 cups milk
  • 1 large egg
  • 3 tbsp unsalted butter, melted
  • 1 tsp vanilla extract
  • 3/4 cup mini chocolate chips

Instructions

  1. 1Whisk together the flour, sugar, baking powder, and salt in a large bowl.
  2. 2In another bowl, whisk the milk, egg, melted butter, and vanilla together.
  3. 3Pour the wet mixture into the dry mixture and stir just until combined; do not overmix.
  4. 4Fold in the chocolate chips.
  5. 5Heat a lightly greased griddle or nonstick pan over medium heat and ladle on about 1/4 cup of batter per pancake.
  6. 6Cook until bubbles appear on top and the bottom is golden, about 2 minutes, then flip and cook another 1 to 2 minutes until cooked through. Serve immediately while warm.
