Corned Beef Hash

Ingredients
- 2 tbsp vegetable oil
- 1 lb potatoes, diced small
- 1 onion, diced
- 2 cups diced cooked corned beef
- Salt and pepper, to taste
- 2 tbsp chopped parsley
- 4 large eggs, for serving
Instructions
- 1Heat the oil in a large skillet over medium heat and add the diced potatoes in an even layer.
- 2Cook, stirring occasionally, until the potatoes are golden and nearly tender, about 10 minutes.
- 3Add the onion and cook until softened, about 4 minutes.
- 4Stir in the corned beef, pressing the mixture into the pan and letting it sit undisturbed for a few minutes at a time so a crust forms, then flipping sections over.
- 5Continue cooking until the hash is well browned in spots and heated through, about 6 minutes total, then season with salt and pepper and stir in the parsley.
- 6Fry the eggs separately to your liking and serve on top of the hash.
