Ingredients

  • 3 large eggs
  • 1 tbsp milk
  • Salt and pepper, to taste
  • 1 tbsp butter
  • 1/4 cup diced ham
  • 2 tbsp diced green bell pepper
  • 2 tbsp diced onion
  • 1/4 cup shredded cheddar cheese

Instructions

  1. 1Whisk the eggs with the milk, salt, and pepper until fully combined and slightly frothy.
  2. 2Melt half the butter in a nonstick skillet over medium heat and sauté the ham, bell pepper, and onion until the vegetables soften, about 3 minutes. Remove and set aside.
  3. 3Wipe the pan, add the remaining butter, and pour in the eggs, swirling to coat the bottom evenly.
  4. 4As the eggs begin to set, gently push the cooked edges toward the center with a spatula, tilting the pan so uncooked egg flows to the edge.
  5. 5When the eggs are mostly set but still slightly glossy on top, spoon the ham mixture and cheese over one half.
  6. 6Fold the omelet in half over the filling and slide it onto a plate to serve.
