Ingredients

  • 3 cups rolled oats
  • 1 cup chopped nuts (almonds, pecans, or walnuts)
  • 1/2 cup shredded coconut, optional
  • 1/2 tsp ground cinnamon
  • 1/2 tsp salt
  • 1/2 cup honey or maple syrup
  • 1/3 cup vegetable oil or melted coconut oil
  • 1 tsp vanilla extract
  • 1/2 cup dried fruit, such as raisins or cranberries

Instructions

  1. 1Preheat the oven to 300°F (150°C) and line a large baking sheet with parchment paper.
  2. 2In a large bowl, toss together the oats, nuts, coconut, cinnamon, and salt.
  3. 3Whisk the honey, oil, and vanilla together, then pour over the oat mixture and stir until every piece is evenly coated.
  4. 4Spread the mixture in an even layer on the prepared baking sheet, pressing it down slightly to encourage clumping.
  5. 5Bake for 25 to 30 minutes, stirring once halfway through, until golden brown and fragrant.
  6. 6Let the granola cool completely on the pan without stirring so it forms crunchy clusters, then stir in the dried fruit and store in an airtight container.
