Chicken Cacciatore

Ingredients
- 4 bone-in, skin-on chicken thighs
- 2 tbsp olive oil
- 1 onion, sliced
- 1 red bell pepper, sliced
- 8 oz mushrooms, sliced
- 3 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 1/2 cup chicken broth
- 1 tsp dried oregano
- 1 tsp dried basil
- salt and pepper, to taste
- fresh basil, for garnish
Instructions
- 1Season the chicken thighs with salt and pepper, then heat the olive oil in a large deep skillet over medium-high heat and brown the thighs for 4-5 minutes per side, then remove to a plate.
- 2Add the onion, bell pepper, and mushrooms to the skillet and saute for 6-7 minutes until softened.
- 3Add the garlic and cook for 30 seconds, then stir in the crushed tomatoes, chicken broth, oregano, and dried basil.
- 4Return the chicken thighs to the skillet, nestling them into the sauce.
- 5Cover and simmer for 25-30 minutes, until the chicken is tender and reaches 165°F internally.
- 6Garnish with fresh basil and serve over pasta, rice, or with crusty bread.
