General Tso-Style Chicken

Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into chunks
  • 1/2 cup cornstarch
  • 3 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 1/4 cup soy sauce
  • 3 tbsp rice vinegar
  • 3 tbsp brown sugar
  • 2 tbsp ketchup
  • 1/2 tsp red pepper flakes
  • 2 tbsp cornstarch mixed with 3 tbsp water

Instructions

  1. 1Toss the chicken chunks in the 1/2 cup of cornstarch until well coated.
  2. 2Heat the vegetable oil in a large skillet over medium-high heat and fry the chicken in batches for 5-6 minutes, until golden and cooked through, then set aside.
  3. 3In the same skillet, saute the garlic and ginger for 30 seconds until fragrant.
  4. 4Whisk together the soy sauce, rice vinegar, brown sugar, ketchup, and red pepper flakes, then add to the skillet and bring to a simmer.
  5. 5Stir in the cornstarch slurry and cook for 1-2 minutes until the sauce thickens.
  6. 6Return the chicken to the skillet and toss to coat evenly in the sauce.
  7. 7Serve hot over steamed rice.
