Grilled Chicken Breasts with Chimichurri

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup fresh parsley, finely chopped
  • 3 cloves garlic, minced
  • 2 tbsp red wine vinegar
  • 1/2 cup olive oil (for chimichurri)
  • 1/2 tsp red pepper flakes

Instructions

  1. 1Preheat a grill or grill pan to medium-high heat.
  2. 2Pound the chicken breasts to an even thickness, then rub with olive oil, salt, and pepper.
  3. 3Grill the chicken for 6-7 minutes per side, until well marked and the internal temperature reaches 165°F.
  4. 4While the chicken cooks, combine the parsley, garlic, red wine vinegar, olive oil, and red pepper flakes in a bowl to make the chimichurri.
  5. 5Let the chicken rest for 5 minutes, then slice and spoon the chimichurri generously over the top.
