Chicken Parmesan

Ingredients
- 4 boneless, skinless chicken breasts, pounded thin
- 1 cup all-purpose flour
- 2 eggs, beaten
- 1.5 cups Italian-style breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/3 cup olive oil, for frying
- 2 cups marinara sauce
- 1.5 cups shredded mozzarella cheese
- salt and pepper, to taste
- 2 tbsp fresh basil, chopped
Instructions
- 1Preheat the oven to 400°F and set up a breading station with flour, beaten eggs, and breadcrumbs mixed with Parmesan.
- 2Season the chicken breasts with salt and pepper, then dredge each in flour, dip in egg, and coat in the breadcrumb mixture.
- 3Heat the olive oil in a large skillet over medium-high heat and fry the breaded chicken for 3-4 minutes per side until golden brown.
- 4Transfer the chicken to a baking dish and spoon marinara sauce over each piece.
- 5Top with shredded mozzarella and bake for 15-20 minutes until the cheese is melted and bubbly and the chicken reaches 165°F.
- 6Garnish with fresh basil and serve over pasta or with a side salad.
