Simple Chicken Fricassee

Ingredients
- 4 bone-in chicken thighs
- 2 tbsp butter
- 1 tbsp olive oil
- 1 onion, diced
- 2 carrots, sliced
- 8 oz mushrooms, sliced
- 2 tbsp all-purpose flour
- 2 cups chicken broth
- 1/2 cup heavy cream
- 1 tsp dried thyme
- salt and pepper, to taste
Instructions
- 1Season the chicken thighs with salt and pepper, then heat the butter and olive oil in a large pot over medium-high heat and brown the chicken for 4-5 minutes per side, then remove to a plate.
- 2Add the onion, carrots, and mushrooms to the pot and saute for 6-7 minutes until softened.
- 3Sprinkle in the flour and cook for 1 minute, stirring constantly, to remove the raw taste.
- 4Gradually whisk in the chicken broth, add the thyme, and bring to a simmer.
- 5Return the chicken to the pot, cover, and simmer for 20-25 minutes until tender and cooked through to 165°F.
- 6Stir in the heavy cream and simmer for a few more minutes until the sauce is creamy.
- 7Season to taste with salt and pepper before serving.
