Simple Chicken Fricassee

Ingredients

  • 4 bone-in chicken thighs
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, sliced
  • 8 oz mushrooms, sliced
  • 2 tbsp all-purpose flour
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 1 tsp dried thyme
  • salt and pepper, to taste

Instructions

  1. 1Season the chicken thighs with salt and pepper, then heat the butter and olive oil in a large pot over medium-high heat and brown the chicken for 4-5 minutes per side, then remove to a plate.
  2. 2Add the onion, carrots, and mushrooms to the pot and saute for 6-7 minutes until softened.
  3. 3Sprinkle in the flour and cook for 1 minute, stirring constantly, to remove the raw taste.
  4. 4Gradually whisk in the chicken broth, add the thyme, and bring to a simmer.
  5. 5Return the chicken to the pot, cover, and simmer for 20-25 minutes until tender and cooked through to 165°F.
  6. 6Stir in the heavy cream and simmer for a few more minutes until the sauce is creamy.
  7. 7Season to taste with salt and pepper before serving.
