Slow-Cooker Salsa Chicken

Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 2 cups salsa
  • 1 packet taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels
  • shredded cheese, for topping

Instructions

  1. 1Place the chicken breasts in the slow cooker and pour the salsa over the top.
  2. 2Sprinkle the taco seasoning evenly over the chicken and salsa.
  3. 3Cover and cook on low for 4-5 hours, until the chicken shreds easily and reaches 165°F.
  4. 4Shred the chicken directly in the slow cooker, then stir in the black beans and corn.
  5. 5Cook for an additional 10-15 minutes on low to heat the beans and corn through.
  6. 6Top with shredded cheese and serve over rice, in tacos, or as a bowl.
