White Chicken Chili

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 cans (4 oz each) diced green chiles
  • 2 tsp ground cumin
  • 1 tsp dried oregano
  • 4 cups chicken broth
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1/2 cup sour cream
  • 1 cup shredded Monterey Jack cheese
  • fresh cilantro, for garnish

Instructions

  1. 1Heat the olive oil in a large pot over medium heat and saute the onion for 4-5 minutes until softened.
  2. 2Add the garlic, green chiles, cumin, and oregano and cook for 1 minute until fragrant.
  3. 3Pour in the chicken broth and add the chicken breasts, then bring to a boil and reduce to a simmer.
  4. 4Cook for 20 minutes, until the chicken reaches 165°F, then remove and shred it before returning it to the pot.
  5. 5Stir in the white beans and simmer for 10 minutes to let the flavors combine.
  6. 6Remove from heat and stir in the sour cream and shredded cheese until melted and creamy.
  7. 7Garnish with fresh cilantro before serving.
