Simple Tiramisu

Ingredients
- 1 1/2 cups brewed espresso or strong coffee, cooled
- 2 tbsp cocoa powder, plus more for dusting
- 4 large egg yolks
- 1/2 cup granulated sugar
- 16 oz mascarpone cheese, softened
- 1 cup heavy cream, whipped to soft peaks
- 24 ladyfinger cookies
Instructions
- 1Pour the cooled coffee into a shallow dish for dipping.
- 2Whisk the egg yolks and sugar together in a heatproof bowl, then set over a pot of gently simmering water and whisk constantly for about 5 minutes, until thickened and pale.
- 3Remove from heat and let cool slightly, then beat in the mascarpone until smooth.
- 4Gently fold the whipped cream into the mascarpone mixture until no streaks remain.
- 5Quickly dip each ladyfinger into the coffee (do not soak them, just a quick dunk) and arrange a layer in the bottom of a 9x9-inch dish.
- 6Spread half of the mascarpone mixture over the ladyfingers, then repeat with a second layer of dipped ladyfingers and the remaining mascarpone mixture.
- 7Dust the top generously with cocoa powder.
- 8Cover and refrigerate for at least 4 hours, or overnight, before slicing and serving.
