One-Pot Taco Pasta

Ingredients

  • 12 oz rotini or elbow macaroni
  • 1 lb ground beef
  • 1 small onion, chopped
  • 2 tablespoons taco seasoning
  • 14 oz canned diced tomatoes
  • 1 cup salsa
  • 2 cups beef broth
  • 1 cup shredded cheddar cheese
  • 1/2 teaspoon salt, to taste
  • Sliced green onions, for garnish
  • Sour cream and crushed tortilla chips, for serving (optional)

Instructions

  1. 1In a large deep skillet or pot, brown the ground beef and onion over medium heat for 6 to 7 minutes, breaking up the meat with a spoon, then drain excess fat.
  2. 2Stir in the taco seasoning, diced tomatoes, salsa, and beef broth, and bring to a boil.
  3. 3Add the uncooked pasta directly to the pot, stir well, cover, and simmer for 12 to 14 minutes, stirring occasionally, until the pasta is tender and the liquid has mostly absorbed.
  4. 4Remove from the heat and sprinkle the cheddar cheese over the top, covering the pot for 2 minutes until melted.
  5. 5Season with salt to taste and garnish with green onions.
  6. 6Serve topped with a dollop of sour cream and crushed tortilla chips if desired.
