Ingredients

  • 14 oz wide flat rice noodles, fresh or soaked
  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoons vegetable oil, divided
  • 2 cloves garlic, minced
  • 2 cups Chinese broccoli or regular broccoli, chopped
  • 2 eggs, lightly beaten
  • 3 tablespoons soy sauce
  • 2 tablespoons dark soy sauce or oyster sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon rice vinegar

Instructions

  1. 1If using dried rice noodles, soak them in warm water for about 30 minutes until pliable, then drain well; fresh noodles just need to be gently separated.
  2. 2Whisk together the soy sauce, dark soy sauce, brown sugar, and rice vinegar in a small bowl to make the sauce.
  3. 3Heat 1 tablespoon of oil in a large skillet or wok over high heat and cook the shrimp for 2 to 3 minutes until pink and just cooked through, then remove and set aside.
  4. 4Add the remaining oil to the skillet, add the garlic, and cook for 30 seconds, then push to one side and pour in the eggs, scrambling briefly.
  5. 5Add the broccoli and stir-fry for 2 minutes until just starting to soften.
  6. 6Add the noodles and sauce, tossing gently but thoroughly for 2 to 3 minutes until the noodles are evenly coated and slightly charred in spots.
  7. 7Return the shrimp to the skillet, toss to combine, and serve immediately.
