Pork Carnitas Tacos

Ingredients

  • 3 lb pork shoulder, cut into large chunks
  • 1 tbsp salt
  • 1 tsp cumin
  • 1 tsp dried oregano
  • 1/2 tsp black pepper
  • 1 orange, juiced
  • 2 limes, juiced
  • 1 onion, quartered
  • 4 cloves garlic, smashed
  • 1 bay leaf
  • 12 small corn tortillas
  • Chopped cilantro and diced onion, for serving

Instructions

  1. 1Season the pork chunks with salt, cumin, oregano, and pepper.
  2. 2Place the pork in a large pot or Dutch oven with the orange juice, lime juice, onion, garlic, and bay leaf.
  3. 3Add enough water to just cover the meat, bring to a simmer, then cover and cook on low heat for about 3 hours, until the pork is very tender.
  4. 4Remove the pork and discard the onion and bay leaf, reserving some of the cooking liquid.
  5. 5Shred the pork with two forks, then spread it on a baking sheet and broil for 5 to 7 minutes, turning once, until the edges crisp up.
  6. 6Moisten the crisped pork with a splash of the reserved cooking liquid, then warm the tortillas and fill with pork, cilantro, and diced onion.
