Pork Fried Rice

Ingredients

  • 1 lb ground pork or diced leftover pork
  • 3 cups cooked, cold day-old rice
  • 2 tbsp vegetable oil
  • 1/2 cup diced carrot
  • 1/2 cup frozen peas
  • 3 green onions, sliced
  • 3 cloves garlic, minced
  • 2 eggs, beaten
  • 3 tbsp soy sauce
  • 1 tsp sesame oil
  • 1/2 tsp white pepper

Instructions

  1. 1Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat and cook the pork, breaking it apart, until browned and cooked through, about 5 to 6 minutes, then remove it from the pan.
  2. 2Add the remaining oil and stir-fry the carrot for 2 minutes, then push it to one side of the pan.
  3. 3Pour the beaten eggs into the empty space and scramble until just set, then mix them into the carrots.
  4. 4Add the cold rice, breaking up any clumps, and stir-fry for 3 to 4 minutes until heated through and starting to crisp slightly.
  5. 5Stir in the peas, garlic, green onions, and the cooked pork, tossing everything together for 2 minutes.
  6. 6Drizzle in the soy sauce, sesame oil, and white pepper, stirring to coat evenly before serving hot.
