Grilled Pork Chops with Peach Salsa

Ingredients
- 4 boneless pork chops
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp smoked paprika
- 2 ripe peaches, diced
- 1/4 red onion, finely diced
- 1 jalapeño, seeded and minced
- 2 tbsp chopped cilantro
- 1 lime, juiced
- 1/2 tsp honey
Instructions
- 1Preheat a grill or grill pan to medium-high heat.
- 2Rub the pork chops with olive oil and season with salt, pepper, and smoked paprika.
- 3In a bowl, combine the diced peaches, red onion, jalapeño, cilantro, lime juice, and honey to make the salsa, then set it aside to let the flavors meld.
- 4Grill the pork chops for 4 to 5 minutes per side, until nicely marked and the center reaches 145°F.
- 5Let the chops rest for 5 minutes on a plate to keep the juices in.
- 6Top each chop with a generous spoonful of the peach salsa before serving.
