Ingredients

  • 4 boneless pork chops
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika
  • 2 ripe peaches, diced
  • 1/4 red onion, finely diced
  • 1 jalapeño, seeded and minced
  • 2 tbsp chopped cilantro
  • 1 lime, juiced
  • 1/2 tsp honey

Instructions

  1. 1Preheat a grill or grill pan to medium-high heat.
  2. 2Rub the pork chops with olive oil and season with salt, pepper, and smoked paprika.
  3. 3In a bowl, combine the diced peaches, red onion, jalapeño, cilantro, lime juice, and honey to make the salsa, then set it aside to let the flavors meld.
  4. 4Grill the pork chops for 4 to 5 minutes per side, until nicely marked and the center reaches 145°F.
  5. 5Let the chops rest for 5 minutes on a plate to keep the juices in.
  6. 6Top each chop with a generous spoonful of the peach salsa before serving.
