Roasted Pork Tenderloin with Herbs

Ingredients
- 1.5 lb pork tenderloin
- 2 tbsp olive oil
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme, chopped
- 3 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp Dijon mustard
Instructions
- 1Preheat the oven to 425°F and line a baking sheet with foil.
- 2Trim any excess silver skin from the tenderloin and pat it dry.
- 3Mix the olive oil, rosemary, thyme, garlic, salt, pepper, and Dijon mustard in a small bowl to make a paste.
- 4Rub the herb paste evenly over the entire tenderloin.
- 5Sear the tenderloin in an oven-safe skillet over medium-high heat for 2 minutes per side until browned.
- 6Transfer the skillet to the oven and roast for 15 to 20 minutes, until the thickest part reads 145°F on a meat thermometer.
- 7Let the tenderloin rest for 5 to 10 minutes before slicing into medallions.
