Sausage Gravy over Biscuits

Ingredients

  • 1 lb ground breakfast pork sausage
  • 3 tbsp all-purpose flour
  • 2 1/2 cups whole milk
  • 1/2 tsp salt
  • 1/2 tsp black pepper, plus more to taste
  • 1/4 tsp cayenne pepper, optional
  • 4 to 6 baked buttermilk biscuits, split

Instructions

  1. 1Cook the sausage in a large skillet over medium heat, breaking it apart, for 6 to 8 minutes until browned and fully cooked.
  2. 2Sprinkle the flour over the sausage and stir constantly for 1 to 2 minutes to cook off the raw flour taste.
  3. 3Slowly pour in the milk while whisking to prevent lumps, then bring the mixture to a gentle simmer.
  4. 4Cook for 5 to 6 minutes, stirring often, until the gravy thickens enough to coat the back of a spoon.
  5. 5Season with salt, pepper, and cayenne if using, adjusting the milk if the gravy gets too thick.
  6. 6Split the warm biscuits and ladle the sausage gravy generously over the top before serving.
