Pork Stir-Fry with Vegetables

Ingredients

  • 1 lb pork loin or sirloin, thinly sliced
  • 2 tbsp soy sauce
  • 1 tbsp cornstarch
  • 2 tbsp vegetable oil
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1 carrot, thinly sliced
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 3 tbsp oyster sauce
  • 1 tbsp rice vinegar
  • 2 green onions, sliced

Instructions

  1. 1Toss the sliced pork with 1 tablespoon of soy sauce and the cornstarch, and let it sit for 10 minutes.
  2. 2Heat 1 tablespoon of oil in a large skillet or wok over high heat and stir-fry the pork for 2 to 3 minutes until just cooked through, then remove it from the pan.
  3. 3Add the remaining oil to the pan and stir-fry the bell pepper, broccoli, and carrot for 3 to 4 minutes until crisp-tender.
  4. 4Add the garlic and ginger and cook for 30 seconds until fragrant.
  5. 5Return the pork to the pan and add the oyster sauce, remaining soy sauce, and rice vinegar, tossing everything to coat.
  6. 6Cook for another 1 to 2 minutes until the sauce thickens slightly and the pork is heated through, then garnish with green onions before serving.
