Stuffed Pork Chops with Spinach and Cheese

Ingredients
- 4 thick-cut boneless pork chops, about 1.5 inches thick
- 1 tbsp olive oil
- 2 cups fresh spinach, chopped
- 2 cloves garlic, minced
- 1/2 cup shredded mozzarella cheese
- 1/4 cup cream cheese, softened
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1 tbsp butter
Instructions
- 1Preheat the oven to 375°F.
- 2Heat 1 teaspoon of olive oil in a skillet over medium heat and sauté the garlic and spinach for 2 to 3 minutes until wilted, then let it cool slightly.
- 3Stir the cream cheese and mozzarella into the cooked spinach to make the filling.
- 4Cut a deep pocket into the side of each pork chop, being careful not to slice all the way through, and season the outside with salt, pepper, and paprika.
- 5Stuff each chop with the spinach and cheese mixture, securing the opening with toothpicks if needed.
- 6Heat the remaining olive oil and butter in an oven-safe skillet over medium-high heat and sear the chops for 3 minutes per side until golden.
- 7Transfer the skillet to the oven and bake for 15 to 18 minutes, until the pork reaches 145°F, then rest for 5 minutes before serving.
