Stuffed Pork Chops with Spinach and Cheese

Ingredients

  • 4 thick-cut boneless pork chops, about 1.5 inches thick
  • 1 tbsp olive oil
  • 2 cups fresh spinach, chopped
  • 2 cloves garlic, minced
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup cream cheese, softened
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1 tbsp butter

Instructions

  1. 1Preheat the oven to 375°F.
  2. 2Heat 1 teaspoon of olive oil in a skillet over medium heat and sauté the garlic and spinach for 2 to 3 minutes until wilted, then let it cool slightly.
  3. 3Stir the cream cheese and mozzarella into the cooked spinach to make the filling.
  4. 4Cut a deep pocket into the side of each pork chop, being careful not to slice all the way through, and season the outside with salt, pepper, and paprika.
  5. 5Stuff each chop with the spinach and cheese mixture, securing the opening with toothpicks if needed.
  6. 6Heat the remaining olive oil and butter in an oven-safe skillet over medium-high heat and sear the chops for 3 minutes per side until golden.
  7. 7Transfer the skillet to the oven and bake for 15 to 18 minutes, until the pork reaches 145°F, then rest for 5 minutes before serving.
