Sweet and Sour Pork

Ingredients
- 1 lb pork loin, cut into bite-size cubes
- 1/2 cup cornstarch
- 2 eggs, beaten
- 3 tbsp vegetable oil
- 1 red bell pepper, chunked
- 1 green bell pepper, chunked
- 1 cup pineapple chunks
- 1/2 cup ketchup
- 1/4 cup rice vinegar
- 3 tbsp brown sugar
- 2 tbsp soy sauce
- 1 tbsp cornstarch mixed with 2 tbsp water
Instructions
- 1Dip the pork cubes in the beaten egg, then coat them in the 1/2 cup of cornstarch, shaking off any excess.
- 2Heat the oil in a large skillet over medium-high heat and fry the pork in batches for 4 to 5 minutes per batch, until golden and cooked through, then drain on paper towels.
- 3In the same skillet, add the bell peppers and stir-fry for 2 to 3 minutes until slightly softened.
- 4Whisk together the ketchup, rice vinegar, brown sugar, and soy sauce in a bowl, then pour it into the skillet with the peppers.
- 5Bring the sauce to a simmer and stir in the cornstarch slurry, cooking for 1 to 2 minutes until glossy and thickened.
- 6Add the pineapple chunks and fried pork back into the skillet, tossing to coat everything evenly before serving hot.
