Pulled Pork Sandwich

Ingredients

  • 4 cups cooked, shredded pork, from a slow-cooked pork shoulder or store-bought
  • 1 cup barbecue sauce, plus extra for serving
  • 4 hamburger buns or soft rolls
  • 1 cup coleslaw, optional
  • 2 tbsp butter, softened

Instructions

  1. 1In a large skillet or saucepan, combine the shredded pork with the barbecue sauce over medium heat.
  2. 2Stir occasionally and warm the pork through for 8 to 10 minutes until it is hot and well coated in sauce.
  3. 3Meanwhile, lightly butter the cut sides of the buns and toast them in a separate pan or under the broiler until golden.
  4. 4Pile a generous scoop of the warm pulled pork onto the bottom half of each bun.
  5. 5Top with coleslaw if using, then close with the top bun and serve with extra barbecue sauce on the side.
