Garlic Shrimp Linguine

Ingredients
- 1 lb large shrimp, peeled and deveined
- 12 oz linguine
- 4 tbsp unsalted butter
- 2 tbsp olive oil
- 5 cloves garlic, minced
- 1/4 tsp red pepper flakes
- 1/2 cup reserved pasta water
- 2 tbsp fresh lemon juice
- 1/4 cup grated Parmesan cheese
- 2 tbsp chopped fresh parsley
- 1/2 tsp salt
Instructions
- 1Bring a large pot of salted water to a boil and cook the linguine according to the package directions, reserving 1/2 cup of pasta water before draining.
- 2While the pasta cooks, heat the olive oil and 2 tablespoons of butter in a large skillet over medium-high heat.
- 3Season the shrimp with salt, add to the skillet, and cook for 1 to 2 minutes per side until pink, then transfer to a plate.
- 4Add the garlic and red pepper flakes to the pan and cook for 30 seconds, then stir in the remaining butter, lemon juice, and a splash of the reserved pasta water.
- 5Add the drained linguine and shrimp to the pan and toss to coat, adding more pasta water as needed to loosen the sauce.
- 6Stir in the Parmesan and parsley and serve immediately.
