Grilled Salmon with Mango Salsa

Ingredients

  • 4 salmon fillets (6 oz each)
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 ripe mango, diced
  • 1/4 cup red onion, finely diced
  • 1/2 red bell pepper, diced
  • 1 tbsp fresh lime juice
  • 2 tbsp chopped fresh cilantro
  • 1/4 tsp jalapeno, minced (optional)

Instructions

  1. 1Preheat a grill or grill pan to medium-high heat and brush the grates lightly with oil.
  2. 2Rub the salmon fillets with olive oil and season with salt and pepper.
  3. 3In a bowl, combine the mango, red onion, bell pepper, lime juice, cilantro, and jalapeno to make the salsa, and set aside.
  4. 4Grill the salmon skin-side down for 5 to 6 minutes, then flip and grill for another 3 to 4 minutes, until it flakes easily with a fork.
  5. 5Transfer the salmon to plates and top each fillet with a generous spoonful of mango salsa before serving.
