Grilled Salmon with Mango Salsa

Ingredients
- 4 salmon fillets (6 oz each)
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 ripe mango, diced
- 1/4 cup red onion, finely diced
- 1/2 red bell pepper, diced
- 1 tbsp fresh lime juice
- 2 tbsp chopped fresh cilantro
- 1/4 tsp jalapeno, minced (optional)
Instructions
- 1Preheat a grill or grill pan to medium-high heat and brush the grates lightly with oil.
- 2Rub the salmon fillets with olive oil and season with salt and pepper.
- 3In a bowl, combine the mango, red onion, bell pepper, lime juice, cilantro, and jalapeno to make the salsa, and set aside.
- 4Grill the salmon skin-side down for 5 to 6 minutes, then flip and grill for another 3 to 4 minutes, until it flakes easily with a fork.
- 5Transfer the salmon to plates and top each fillet with a generous spoonful of mango salsa before serving.
