Mild Home-Style Fish Curry

Ingredients

  • 1 lb firm white fish fillets, cut into chunks
  • 2 tbsp vegetable oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 1 tsp curry powder
  • 1/2 tsp ground turmeric
  • 1/2 tsp ground cumin
  • 1 can (14 oz) diced tomatoes
  • 1 cup coconut milk
  • 1/2 tsp salt
  • 2 tbsp chopped fresh cilantro

Instructions

  1. 1Heat the oil in a large skillet or pot over medium heat and cook the onion for 4 to 5 minutes until softened.
  2. 2Stir in the garlic and ginger and cook for 1 minute until fragrant.
  3. 3Add the curry powder, turmeric, and cumin, stirring for 30 seconds to toast the spices.
  4. 4Pour in the diced tomatoes and coconut milk, add the salt, and simmer for 8 to 10 minutes to let the sauce thicken slightly.
  5. 5Gently add the fish chunks, cover, and simmer for 6 to 8 minutes, until the fish is opaque and flakes easily with a fork.
  6. 6Stir in the cilantro and serve warm over rice.
