Mild Home-Style Fish Curry

Ingredients
- 1 lb firm white fish fillets, cut into chunks
- 2 tbsp vegetable oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp grated fresh ginger
- 1 tsp curry powder
- 1/2 tsp ground turmeric
- 1/2 tsp ground cumin
- 1 can (14 oz) diced tomatoes
- 1 cup coconut milk
- 1/2 tsp salt
- 2 tbsp chopped fresh cilantro
Instructions
- 1Heat the oil in a large skillet or pot over medium heat and cook the onion for 4 to 5 minutes until softened.
- 2Stir in the garlic and ginger and cook for 1 minute until fragrant.
- 3Add the curry powder, turmeric, and cumin, stirring for 30 seconds to toast the spices.
- 4Pour in the diced tomatoes and coconut milk, add the salt, and simmer for 8 to 10 minutes to let the sauce thicken slightly.
- 5Gently add the fish chunks, cover, and simmer for 6 to 8 minutes, until the fish is opaque and flakes easily with a fork.
- 6Stir in the cilantro and serve warm over rice.
