Shrimp Scampi Pasta

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 12 oz spaghetti
  • 4 tbsp unsalted butter
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/3 cup dry white wine
  • 2 tbsp fresh lemon juice
  • 1/4 tsp red pepper flakes
  • 1/2 tsp salt
  • 1/4 cup chopped fresh parsley
  • 1/4 cup reserved pasta water

Instructions

  1. 1Cook the spaghetti in a large pot of salted boiling water according to the package directions, reserving 1/4 cup of pasta water before draining.
  2. 2Meanwhile, heat the olive oil in a large skillet over medium-high heat, season the shrimp with salt, and cook for 1 to 2 minutes per side until pink, then remove from the pan.
  3. 3Add 2 tablespoons of butter and the garlic to the pan and cook for 30 seconds until fragrant.
  4. 4Pour in the white wine and lemon juice and simmer for 2 minutes to reduce slightly, then stir in the remaining butter.
  5. 5Add the drained spaghetti, shrimp, and reserved pasta water to the pan and toss until everything is well coated and glossy.
  6. 6Stir in the parsley and red pepper flakes and serve hot.
