Shrimp Stir-Fry

Ingredients
- 1 lb large shrimp, peeled and deveined
- 2 tbsp vegetable oil, divided
- 1 red bell pepper, sliced
- 1 cup broccoli florets
- 1 carrot, thinly sliced
- 2 cloves garlic, minced
- 1 tsp grated fresh ginger
- 3 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp cornstarch mixed with 2 tbsp water
- 1 tsp sesame oil
Instructions
- 1Heat 1 tablespoon of oil in a large wok or skillet over high heat and stir-fry the shrimp for 2 minutes until pink, then remove and set aside.
- 2Add the remaining oil to the pan and stir-fry the bell pepper, broccoli, and carrot for 4 to 5 minutes until crisp-tender.
- 3Add the garlic and ginger and cook for 30 seconds until fragrant.
- 4Stir in the soy sauce and oyster sauce, then pour in the cornstarch slurry and cook for 1 minute until the sauce thickens.
- 5Return the shrimp to the pan and toss everything together until well coated and heated through.
- 6Drizzle with sesame oil and serve hot over rice.
