Shrimp Stir-Fry

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp vegetable oil, divided
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1 carrot, thinly sliced
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp cornstarch mixed with 2 tbsp water
  • 1 tsp sesame oil

Instructions

  1. 1Heat 1 tablespoon of oil in a large wok or skillet over high heat and stir-fry the shrimp for 2 minutes until pink, then remove and set aside.
  2. 2Add the remaining oil to the pan and stir-fry the bell pepper, broccoli, and carrot for 4 to 5 minutes until crisp-tender.
  3. 3Add the garlic and ginger and cook for 30 seconds until fragrant.
  4. 4Stir in the soy sauce and oyster sauce, then pour in the cornstarch slurry and cook for 1 minute until the sauce thickens.
  5. 5Return the shrimp to the pan and toss everything together until well coated and heated through.
  6. 6Drizzle with sesame oil and serve hot over rice.
