Ingredients
- 1.5 lbs russet potatoes, diced small
- 8 oz breakfast sausage or bacon, chopped
- 1 bell pepper, diced
- 1/2 onion, diced
- 2 tbsp olive oil
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 eggs
- Chopped chives for garnish
Instructions
- 1Heat the olive oil in a large skillet over medium heat and add the diced potatoes in a single layer, letting them cook undisturbed for a few minutes so they can brown.
- 2Cook the potatoes for 10 to 12 minutes total, stirring occasionally, until they are golden and mostly fork-tender.
- 3Push the potatoes to one side and add the sausage, bell pepper, and onion to the same skillet, cooking for 6 to 8 minutes until the sausage is browned and the vegetables have softened.
- 4Stir everything together in the skillet and season with smoked paprika, garlic powder, salt, and pepper.
- 5Make four small wells in the hash, crack an egg into each, cover the skillet, and cook for 4 to 5 minutes until the egg whites are set but the yolks are still soft.
- 6Garnish with chives and serve straight from the skillet.
