One-Pan Breakfast Hash

Ingredients

  • 1.5 lbs russet potatoes, diced small
  • 8 oz breakfast sausage or bacon, chopped
  • 1 bell pepper, diced
  • 1/2 onion, diced
  • 2 tbsp olive oil
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 eggs
  • Chopped chives for garnish

Instructions

  1. 1Heat the olive oil in a large skillet over medium heat and add the diced potatoes in a single layer, letting them cook undisturbed for a few minutes so they can brown.
  2. 2Cook the potatoes for 10 to 12 minutes total, stirring occasionally, until they are golden and mostly fork-tender.
  3. 3Push the potatoes to one side and add the sausage, bell pepper, and onion to the same skillet, cooking for 6 to 8 minutes until the sausage is browned and the vegetables have softened.
  4. 4Stir everything together in the skillet and season with smoked paprika, garlic powder, salt, and pepper.
  5. 5Make four small wells in the hash, crack an egg into each, cover the skillet, and cook for 4 to 5 minutes until the egg whites are set but the yolks are still soft.
  6. 6Garnish with chives and serve straight from the skillet.
