Ingredients
- 4 boneless skinless chicken breasts, pounded thin
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan, plus more for topping
- 1 egg, beaten
- 3 tbsp olive oil
- 2 cups marinara sauce
- 1 cup shredded mozzarella
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- Chopped basil for garnish
Instructions
- 1Season the chicken with salt, pepper, and Italian seasoning, then dip each piece in the beaten egg and coat with the breadcrumb and Parmesan mixture.
- 2Heat the olive oil in a large oven-safe skillet over medium heat and cook the chicken for 3 to 4 minutes per side until golden and crisp, then remove to a plate.
- 3Pour the marinara sauce into the same skillet, scraping up any browned bits, and bring to a gentle simmer.
- 4Nestle the chicken back into the sauce right in the skillet and spoon a little sauce over the top of each piece.
- 5Sprinkle the mozzarella and extra Parmesan over the chicken, then cover and cook for 5 to 7 minutes until the cheese melts and the chicken is cooked through.
- 6Garnish with basil and serve straight from the skillet.
