One-Pan Chicken Parmesan Skillet

Ingredients

  • 4 boneless skinless chicken breasts, pounded thin
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan, plus more for topping
  • 1 egg, beaten
  • 3 tbsp olive oil
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Chopped basil for garnish

Instructions

  1. 1Season the chicken with salt, pepper, and Italian seasoning, then dip each piece in the beaten egg and coat with the breadcrumb and Parmesan mixture.
  2. 2Heat the olive oil in a large oven-safe skillet over medium heat and cook the chicken for 3 to 4 minutes per side until golden and crisp, then remove to a plate.
  3. 3Pour the marinara sauce into the same skillet, scraping up any browned bits, and bring to a gentle simmer.
  4. 4Nestle the chicken back into the sauce right in the skillet and spoon a little sauce over the top of each piece.
  5. 5Sprinkle the mozzarella and extra Parmesan over the chicken, then cover and cook for 5 to 7 minutes until the cheese melts and the chicken is cooked through.
  6. 6Garnish with basil and serve straight from the skillet.
