One-Pan Sausage and Cabbage

Ingredients
- 1 lb smoked sausage, sliced
- 1/2 head green cabbage, chopped into wedges or ribbons
- 1 onion, sliced
- 2 carrots, sliced
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1/2 tsp caraway seeds (optional)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp apple cider vinegar
Instructions
- 1Heat the olive oil in a large skillet over medium-high heat and brown the sausage slices for 3 to 4 minutes, then remove to a plate.
- 2In the same skillet, using the rendered fat, add the onion and carrots and cook for 4 to 5 minutes until they start to soften.
- 3Add the cabbage to the skillet in batches, letting each addition wilt down before adding more, since it cooks down significantly in the same pan.
- 4Stir in the garlic, caraway seeds if using, salt, and pepper, and cook for 8 to 10 minutes until the cabbage is tender and lightly browned in spots.
- 5Return the sausage to the skillet and stir in the apple cider vinegar, cooking for 2 more minutes until everything is heated through.
- 6Serve straight from the skillet while hot.
