One-Pan Sausage and Cabbage

Ingredients

  • 1 lb smoked sausage, sliced
  • 1/2 head green cabbage, chopped into wedges or ribbons
  • 1 onion, sliced
  • 2 carrots, sliced
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/2 tsp caraway seeds (optional)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp apple cider vinegar

Instructions

  1. 1Heat the olive oil in a large skillet over medium-high heat and brown the sausage slices for 3 to 4 minutes, then remove to a plate.
  2. 2In the same skillet, using the rendered fat, add the onion and carrots and cook for 4 to 5 minutes until they start to soften.
  3. 3Add the cabbage to the skillet in batches, letting each addition wilt down before adding more, since it cooks down significantly in the same pan.
  4. 4Stir in the garlic, caraway seeds if using, salt, and pepper, and cook for 8 to 10 minutes until the cabbage is tender and lightly browned in spots.
  5. 5Return the sausage to the skillet and stir in the apple cider vinegar, cooking for 2 more minutes until everything is heated through.
  6. 6Serve straight from the skillet while hot.
