Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1 cup beef broth
  • 1 cup uncooked elbow macaroni or small pasta
  • 1 cup shredded cheddar cheese
  • 1 cup canned black beans, drained
  • 1/2 cup corn kernels
  • Chopped cilantro and sour cream for serving

Instructions

  1. 1In a large skillet over medium-high heat, brown the ground beef with the onion, breaking it up as it cooks, about 6 to 7 minutes, then drain excess fat.
  2. 2Stir in the taco seasoning, salsa, and beef broth, scraping up any browned bits from the bottom of the skillet.
  3. 3Add the uncooked pasta directly to the skillet, stir to submerge it in the liquid, cover, and simmer for 12 to 14 minutes, stirring occasionally, until the pasta is tender.
  4. 4Stir in the black beans and corn and cook for another 2 minutes until warmed through.
  5. 5Sprinkle the shredded cheese over the top, cover, and let it melt for 2 minutes off the heat.
  6. 6Top with cilantro and a dollop of sour cream, then serve straight from the skillet.
