One-Skillet Beef and Broccoli

Ingredients
- 1 lb flank steak, thinly sliced against the grain
- 4 cups broccoli florets
- 2 tbsp vegetable oil, divided
- 3 cloves garlic, minced
- 1 tsp grated fresh ginger
- 1/3 cup soy sauce
- 2 tbsp brown sugar
- 1 tbsp cornstarch mixed with 2 tbsp water
- 1/2 cup beef broth
- Cooked rice for serving
Instructions
- 1Heat a tablespoon of oil in a large skillet or wok over high heat and sear the beef in a single layer for 1 to 2 minutes per side until browned, then remove to a plate.
- 2Add the remaining oil to the same skillet and stir-fry the broccoli for 3 to 4 minutes until bright green and just tender-crisp.
- 3Push the broccoli to the side, add the garlic and ginger to the center of the skillet, and cook for 30 seconds until fragrant.
- 4Whisk together the soy sauce, brown sugar, and beef broth, then pour it into the same skillet.
- 5Stir in the cornstarch slurry and simmer for 1 to 2 minutes until the sauce thickens and coats everything.
- 6Return the beef to the skillet, toss to combine and warm through, then serve over rice straight from the pan.
