One-Skillet Creamy Gnocchi

Ingredients

  • 1 lb potato gnocchi
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 2 cups baby spinach
  • 1 cup cherry tomatoes, halved
  • 3/4 cup heavy cream
  • 1/2 cup chicken or vegetable broth
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp red pepper flakes (optional)

Instructions

  1. 1Melt the butter in a large skillet over medium heat and add the gnocchi in a single layer, cooking for 3 to 4 minutes per side until lightly golden.
  2. 2Add the garlic and cherry tomatoes to the same skillet and cook for 1 minute until fragrant.
  3. 3Pour in the broth and cream, stirring to combine, and bring to a gentle simmer right in the skillet.
  4. 4Stir in the Parmesan, Italian seasoning, and salt, letting the sauce thicken slightly for 3 to 4 minutes.
  5. 5Fold in the spinach and cook just until wilted, about 1 to 2 minutes.
  6. 6Sprinkle with red pepper flakes if using, and serve directly from the skillet while the sauce is still glossy.
