Sheet-Pan Chicken Fajitas

Ingredients

  • 1.5 lbs boneless skinless chicken breasts, sliced into strips
  • 2 bell peppers, sliced
  • 1 red onion, sliced
  • 3 tbsp olive oil
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1 lime, juiced
  • 8 small flour tortillas, warmed
  • Sour cream and salsa for serving

Instructions

  1. 1Preheat the oven to 425°F and line a large sheet pan with foil or parchment for easy cleanup.
  2. 2In a large bowl, toss the chicken strips, bell peppers, and onion with olive oil, chili powder, cumin, smoked paprika, garlic powder, and salt until evenly coated.
  3. 3Spread everything in a single layer on the sheet pan, giving the pieces a little space so they roast instead of steam.
  4. 4Roast for 20 to 25 minutes, stirring once halfway through, until the chicken is cooked through and the peppers have charred edges.
  5. 5Squeeze fresh lime juice over the whole pan right when it comes out of the oven.
  6. 6Serve straight from the pan with warm tortillas, sour cream, and salsa so everyone builds their own fajita.
