Sheet-Pan Meatballs and Vegetables

Ingredients

  • 1 lb ground beef or Italian sausage
  • 1/3 cup breadcrumbs
  • 1 egg
  • 2 tbsp grated Parmesan
  • 2 cloves garlic, minced
  • 1/2 tsp Italian seasoning
  • 1/2 tsp salt, divided
  • 1 zucchini, sliced
  • 1 cup cherry tomatoes
  • 1 red onion, chunked
  • 2 tbsp olive oil

Instructions

  1. 1Preheat the oven to 400°F and line a large sheet pan with parchment paper.
  2. 2In a bowl, mix the ground beef, breadcrumbs, egg, Parmesan, garlic, Italian seasoning, and half the salt, then roll into 16 to 18 evenly sized meatballs.
  3. 3Arrange the meatballs on one side of the sheet pan, leaving space between them so they brown rather than steam.
  4. 4Toss the zucchini, cherry tomatoes, and red onion with olive oil and remaining salt, then spread on the other side of the same pan.
  5. 5Bake for 20 to 25 minutes, turning the meatballs once, until they reach 160°F internally and the vegetables are tender and lightly charred.
  6. 6Serve everything together straight from the sheet pan.
