Sheet-Pan Steak and Veggies

Ingredients
- 1.5 lbs sirloin steak, cut into cubes
- 1 lb baby potatoes, quartered
- 1 red bell pepper, chunked
- 1 cup broccoli florets
- 3 tbsp olive oil, divided
- 1 tbsp soy sauce
- 2 cloves garlic, minced
- 1 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp chopped fresh parsley
Instructions
- 1Preheat the oven to 425°F and line a sheet pan with foil.
- 2Toss the potatoes with a tablespoon of oil and a pinch of salt, spread on the pan, and roast for 12 minutes to soften them before the steak goes on.
- 3Meanwhile, toss the steak cubes and remaining vegetables with the rest of the oil, soy sauce, garlic, onion powder, salt, and pepper.
- 4Add the steak and vegetables to the same pan with the potatoes, spreading everything into one even layer so it browns instead of steams.
- 5Roast for 8 to 10 minutes for medium doneness, tossing once, until the steak is browned outside and the vegetables are tender-crisp.
- 6Let the pan rest for a couple of minutes, sprinkle with parsley, and serve.
