Sheet-Pan Turkey Meatloaf and Potatoes

Ingredients

  • 1.5 lbs ground turkey
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1/4 cup ketchup, divided
  • 1/4 cup diced onion
  • 2 cloves garlic, minced
  • 1 tsp Worcestershire sauce
  • 1/2 tsp salt, divided
  • 1 lb baby potatoes, halved
  • 1 tbsp olive oil
  • 1 cup green beans, trimmed

Instructions

  1. 1Preheat the oven to 400°F and line a large sheet pan with foil.
  2. 2In a bowl, mix the ground turkey, breadcrumbs, egg, 2 tablespoons of ketchup, diced onion, garlic, Worcestershire sauce, and half the salt until just combined.
  3. 3Shape the mixture into a loaf and place it on one side of the sheet pan, then brush the top with the remaining ketchup.
  4. 4Toss the potatoes with olive oil and remaining salt and spread them around the meatloaf on the same pan.
  5. 5Bake for 25 minutes, then add the green beans to any open space on the pan and continue baking for 10 to 12 more minutes, until the meatloaf reaches 165°F and the potatoes are tender.
  6. 6Let the meatloaf rest for 5 minutes on the pan before slicing and serving with the vegetables.
