Ingredients
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 cup buttermilk
- 2 large eggs
- 1/3 cup melted butter, plus more for the pan
Instructions
- 1Preheat the oven to 400 F and grease a 9-inch baking pan or cast iron skillet.
- 2Whisk together the cornmeal, flour, sugar, baking powder, and salt in a large bowl.
- 3In a separate bowl, whisk the buttermilk, eggs, and melted butter together.
- 4Pour the wet ingredients into the dry ingredients and stir just until combined; do not overmix.
- 5Pour the batter into the prepared pan and bake for 20-25 minutes, until a toothpick inserted in the center comes out clean.
- 6Let cool for 10 minutes before slicing and serving warm.
