Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup buttermilk
  • 2 large eggs
  • 1/3 cup melted butter, plus more for the pan

Instructions

  1. 1Preheat the oven to 400 F and grease a 9-inch baking pan or cast iron skillet.
  2. 2Whisk together the cornmeal, flour, sugar, baking powder, and salt in a large bowl.
  3. 3In a separate bowl, whisk the buttermilk, eggs, and melted butter together.
  4. 4Pour the wet ingredients into the dry ingredients and stir just until combined; do not overmix.
  5. 5Pour the batter into the prepared pan and bake for 20-25 minutes, until a toothpick inserted in the center comes out clean.
  6. 6Let cool for 10 minutes before slicing and serving warm.
