Spanish Rice

Ingredients
- 2 tbsp vegetable oil
- 1 1/2 cups long-grain white rice
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1 cup tomato sauce
- 2 cups chicken broth
- 1 tsp cumin
- 1/2 tsp chili powder
- 1/2 tsp salt
- 2 tbsp chopped cilantro, for garnish
Instructions
- 1Heat the oil in a saucepan over medium heat and toast the rice, stirring frequently, until lightly golden, about 4-5 minutes.
- 2Add the onion and garlic and cook for 2-3 minutes, until fragrant.
- 3Stir in the tomato sauce, broth, cumin, chili powder, and salt, and bring to a boil.
- 4Cover, reduce heat to low, and simmer for 18-20 minutes, until the rice is tender and the liquid is absorbed.
- 5Fluff with a fork, garnish with cilantro, and serve.
