Pork Carnitas

Ingredients

  • 4 lb pork shoulder, cut into large chunks
  • 1 onion, quartered
  • 4 cloves garlic, minced
  • 1 orange, juiced
  • 2 limes, juiced
  • 1 tbsp ground cumin
  • 1 tbsp dried oregano
  • Salt and black pepper to taste
  • 1 cup chicken broth
  • 12 corn tortillas

Instructions

  1. 1Place the pork chunks and onion in the slow cooker.
  2. 2Whisk together the garlic, orange juice, lime juice, cumin, oregano, salt, and pepper, then pour the mixture over the pork along with the chicken broth.
  3. 3Cover and cook on low for 8 hours or on high for 5 hours, until the pork is extremely tender and shreds easily.
  4. 4Remove the pork, shred it with two forks, and discard the onion pieces if desired.
  5. 5Spread the shredded pork on a baking sheet and broil for 5 minutes, or crisp it in a hot skillet with a bit of the cooking liquid, until the edges are golden and slightly crispy.
  6. 6Serve warm in corn tortillas with your favorite toppings.
