Split Pea Soup with Ham

Ingredients

  • 1 lb dried split peas, rinsed
  • 2 cups diced cooked ham
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1 bay leaf
  • 1/2 tsp dried thyme
  • Salt and black pepper to taste

Instructions

  1. 1Add the split peas, ham, onion, carrots, celery, garlic, broth, bay leaf, and thyme to the slow cooker and stir to combine.
  2. 2Cover and cook on low for 7 to 8 hours or on high for 4 hours, until the peas have broken down into a thick, creamy soup.
  3. 3Remove the bay leaf and stir the soup well, mashing a bit against the side of the pot if you would like it smoother.
  4. 4Season with salt and pepper to taste before ladling into bowls to serve.
